Most people would never guess that they are eating the fruit of a cactus when they bite into a dragon fruit, but it is true! The Dragon Fruit, or Pitaya, comes from the vining cactus, Hylocereus, and the fruits can be found with flesh of two different colors, a  striking pink, and a creamy white. The fruit can last for two to three weeks in the refrigerator, but they will probably get eaten WAY before that. The locals here like to eat them slightly chilled, with a spoon, right out of the rind. Mmmm!
